SPINACH RICE

Spinach rice is a healthy and easy meal for the whole family! You can accompany it with feta and for a more savory taste, a little lemon juice.

Ingredients

1 lbs (400-450g) of spinach

1 onion

1 tbsp dill

1 tsp salt

¼ tsp pepper

¾  cup tomato juice

½ tsp sugar

3/4 cup of medium grain rice

¼ cup olive oil

Directions

Wash the spinach  well and cut it into medium pieces

Wash the dill and cut it finely

Put the oil and the chopped onion in a saucepan

Fry it until it gets transparent

Throw in the spinach and mix it with the onion

Add 5 cups of water to cover the spinach well

Add the rest of the ingredients except the rice

Boil the spinach for 10 minutes

Wash the rice and add it to the pot

Cook on medium heat until the rice is cooked and remains with its sauce (about 15-20 minutes)

Stir often

** If the rice isn’t ready,  add a little more water (½ cup)

** add ¼  lemon to your serving if prefered (optional)
