VASILOPITA

Vasilopita is a traditional cake that is made for the new year. After it is baked, wrap a coin in aluminum foil and place it in the bottom of the cake, so that no one knows where it is. On new years eve or the following day, cut it into pieces and give it to each family member starting from the oldest to the youngest. Who ever wins they say will be the lucky one of the year!  Happy New Year!!

Ingredients

1 cup sunflower or corn oil

2 cups of sugar

4 eggs

1 cup orange juice

200 grs yogurt

500grs self-rising flour

Zest from two oranges

Decoration

Powdered sugar

Baking chocolate (couverture)

Whatever designs you want

A coin or trinket

Directions

Put the oil and sugar in a bowl and beat them until the sugar melts a little

add the eggs one by one to combine

Add the orange juice, yogurt and zest

Slowly add the sifted flour

put it in a medium round pan at 170 degrees for about 1 hour

After the cake cools wrap the coin with aluminum foil and place in the bottom of the cake (for the tradition)

** if it starts to get a very dark color, cover it lightly with an aluminum foil on top

 ** put a toothpick in the middle of the dessert and see if our dessert is done (if the toothpick comes out clean)

** if you use all-purpose flour,  add 2 ½ tsp baking powder

** decorate as desired
