Potato souffle is ideal for a main course or as a side dish for grilled meat or chicken. Preferably served warm but it’s just as nice cold!
Ingredients
1 kilo of potatoes (6-7 medium)
¼ cheese that melts (gouda, mozzarella, etc.) sliced or grated
250 grs feta cheese grated (optional) gives a nice flavor
1 cup of grated kefalotyri or parmesan
4 slices of bacon, ham or turkey
2 eggs
2 ½ cups of milk
1/3 cup olive oil
Directions
Clean the potatoes and cut them into very thin slices
Grease a large Pyrex or a medium rectangular pan with a little oil
Place a layer of potatoes and where there are gaps, put a few more to cover well
Pour half the cheeses everywhere
And half the cold cuts cut into small pieces
some salt and pepper
In the same way, add potatoes, the rest of the cold cuts and the cheeses, except for the ¼ cup of Kefalotyri or parmesan that will be used for the top
place the last potatoes on top
Beat the eggs, milk and oil in a bowl and pour over the soufflé
Add the grated kefalotiri or parmesan , a little salt and pepper
Cover with aluminum foil
Bake at 180 degrees for an hour and uncover the Pyrex and bake for fifteen to twenty minutes until it gets a nice golden brown color
