A traditional recipe for Hummus from the Middle East! Very easy and delicious!
Ingredients
220-250 g chickpeas
1 tsp salt
5 tbsp olive oil
1 clove of garlic
2 tsp tahini
1 small lemon
1/3-1/2 cup water from the boiled chickpeas
Directions
Put the chickpeas in a large pot and cover them with plenty of water
Let them soak overnight and double in size (at least 12 hours)
The next day bring them to a boil and strain them
Put them back into the pot and cover them with water, boil for 45 minutes – 1 hour until they soften well
After boiling,
Keep ½ cup of the water in which the chickpeas were boiled
Strain the chickpeas
Place all the ingredients in the blender except the water from the chickpeas
Mash to homogenize, scrape with a spoon if needed
Pour the water little by little until it becomes as smooth as you want it (no need to use all the water)
Serve with a little olive oil on top
