GREEK TOMATO FRITTERS (Domatokeftedes)

Perfect Tomato Fritters from the island of Santorini! The best appetizer for Summer!

Ingredients

3-4 tomatoes

1 onion

½ tsp salt

¼ tsp pepper

½ tsp oregano

3-4 parsley leaves finely chopped

1 tsp baking powder

6-7 tbs of flour

Directions

Peel and finely chop the tomatoes in a bowl

Grate the onion

Add all the ingredients except the flour

Mix well

Add the flour little by little are until it becomes a thick paste (depending on how ripe the tomatoes are)

Fry in hot oil, adding the mixture spoon by spoon

As soon as it gets a light brown color on one side, turn them over to get the other side as well

Place them on absorbent paper

** You can also add 100 gr. feta cheese which is also delicious
