Lemon chickpea soup is an easy and classic recipe! Perfect now that the weather is getting colder!
Ingredients
200 g of chickpeas
1 onion
2 cloves of garlic
½ tsp salt
¼ tsp pepper
5 tbsp olive oil
½ lemon
Directions
Place the chickpeas in a pot and cover them very well with water
Leave them all night to double in size
The next day bring them to a boil and strain them
Wash the chickpeas with plenty of water and put them back in the pot with enough water to cover them well
Let them boil for half an hour
Strain them again and rinse the pot
Add the oil , chopped onion and chopped garlic, fry a little (saute, they will turn a transparent color)
Pour the chickpeas into the pot and mix them
Add water to cover the chickpeas
Add the salt and pepper
Boil them for half an hour more
When there isnt alot of water left in the pot and the chickpeas are ready, squeeze the lemon into the soup
It should be left with some water
** Depending on the chickpeas it may take 15 more minutes
** if there is no more water in the pot and the chickpeas aren’t ready, add a little hot water so that the boiling does not stop and leave them a little bit more
** May add more lemon if desired
