A great side dish or appetizer! Croquettes are easy to make! You will love them for birthdays, parties and for any other occasion!
Ingredients
4-5 potatoes (700g)
¼ cup milk
1 tsp salt
1 tbsp margarine or butter
2 eggs
A little pepper
1 cup of greek kefalotyri or romano cheese grated
5 tbs of flour
½ cup of breadcrumbs (90g)
Oil for frying
Directions
Clean and wash the potatoes. Cut them in half and then into small pieces
Put them in a pot and cover them well with water
Add 1 teaspoon of salt
Boil the potatoes until they are very soft and when pierced with a fork
Strain them and put them back in the pot
Add the butter while the potatoes are still warm
Mash with the puree and try not to leave any pieces
Add the milk little by little
Add some pepper
Divide the eggs into two bowls
After the mixture has cooled, beat the yolks and pour them into the potatoes
Add the cup of grated kefalotiri or romano cheese
Mix well
Put the flour in one bowl and the breadcrumbs in the other, in the third bowl are the egg whites slightly beaten with a fork
On a large plate or other container (that can fit in the fridge) place a piece of baking paper (parchment paper)
Take a tablespoon of mixture and shape into a circle and then a bit longer forming a cylinder as in the picture
Dip them first through the flour, then through the egg white and finally through the breadcrumbs
Place them on the baking paper and put them in the fridge to firm up a bit for about 1 hour or ½ hour in the freezer **
Fry them in hot oil on medium heat a few at a time until they get a golden color
When you take them out, put them on absorbent kitchen paper for a while to remove excess oil
** At the point where they are put in the freezer, you may let them freeze very well for 3-4 hours and then store them in airtight freezer bags for next use
** They are also made in the oven on parchment paper
