VEGAN ZUCCHINI FRITTERS

It’s that time of year where there are fresh from the garden zucchini! Time to make delicious vegan fritters! Perfect for a side dish and very easy to make!

Ingredients

2-3 zucchini (450-500g)

1 onion

1 tsp dill

1 tsp parsley

1 tsp salt

¼-½ tsp pepper

½ tsp garlic powder (1 clove)

2 tbsp olive oil

1 tsp baking powder

6 tbsp flour

Directions

Cut the ends off the zucchini and wash them well

In a bowl, grate the zucchini on the coarse side of the grater

Grate the onion and put it in the bowl

Pour in ½ teaspoon of salt

Stir

Let it stand for 5-10 minutes for the zucchini to release the excess water

Squeeze the mixture well with your hands to remove all the water

Add all the remaining ingredients and mix very well

Place a baking sheet in the pan

Put some mixture in your hand and make small patties

Place them on the baking sheet and press them a little so that they cook evenly

Bake at 180 degrees for ½ hour, turning once after 15 minutes

** the fritters may also be fried and placed on a paper towel
