GREEN BEANS IN TOMATO SAUCE (FASOLAKIA)

Green beans! A delicious, healthy and vegan dish. The perfect summer meal! Fresh beans from the garden for the whole family!

Ingredients

1 kilo of green beans

1 onion

¼ cup olive oil

1 tsp salt

¼ tsp pepper

½ tsp sugar

1 tbsp tomato paste

½ cup tomato juice

2-3 potatoes

2 tbsp chopped parsley (1/3 bunch)

Directions

Cut the ends off the beans and clean them all around to make sure there are no fibers (strings)

Wash the beans

Finely chop the onion

Clean and wash the potatoes and cut them into quarters

On high heat

Put the oil in a pot and add the onion and saute it

Add the tomato paste and stir to melt

Put in the beans and mix

Add the potatoes and tomato juice

Add water to cover the beans well

Add salt, pepper, sugar and parsley

Lower the heat to medium

Cover the pot with the lid

Cook for about 1 hour

It will be left with its sauce

** Serve with bread and feta cheese (optional)
