Ingredients
Servings 3-4
1 cup of lentils
1 onion
2 cloves garlic
1 bay leaf
1 teaspoon oregano
1 teaspoon tomato paste
3-4 tablespoons olive oil
1 tsp salt
¼ tsp pepper
Directions
Put the lentils in a medium saucepan.
Cover them with water . Αs soon as they come to a boil.
drain and rinse
Put the lentils back in the pot (cover with water halfway through the pot)
Clean the onion and finely chop it, put in pot.
Clean the garlic and add it to the pot as they are whole
Add all other ingredients.
Cook on medium heat for about 30-45 minutes or until the lentils are soft (depending on the lentils)
If the lentils are still not soft add one cup of water and let boil for another 15 minutes
The lentils are ready when they are soft and not with a lot of water
Like a thick soup
