GREEK GIGANTES (giant beans)

Ingredients

Servings 4-5

400-500 gr. Giant beans

2 carrots

2 onions

½ a bunch of parsley

1 teaspoon salt (and a little more whoever wants) or 4 rounds

¼  teaspoon of pepper

½  teaspoon of sugar

1 cup of olive oil

1 can of tomato sauce

2 cups of water

2 chili peppers(optional)

Directions

We put the beans in a pot with plenty of water from the night to soak.

The next day,  bring the beans to a boil, strain the beans and put them in a pot with plenty of water and boil them over medium heat to soften,  about an hour.

Cut the onion in half and then slice.

Peel the carrots, cut them in medium round slices not too thick.

Chop the parsley in small pieces

Strain the beans and put them in the pan.

Add all the  ingredients.

Put them in the oven at 180 degrees for about an hour.

If  near the end water is needed you may add half a cup.
