Usually found in the winter.<\/h4>\n<p><!--more--><\/p>\n<h4>Ingredients<\/h4>\n<p>Bergamot<\/p>\n<p>Sugar<\/p>\n<p>\u00bd cup Water<\/p>\n<p>albaroriza (berry root flower) or vanilla powder<\/p>\n<p>1 tsp Lemon juice<\/p>\n<p><b>**<\/b>depending on how many grams you will make , you double the sugar<\/p>\n<p><b>Ex. <\/b>500 gr fruit than you put 1000 gr sugar<\/p>\n<p><b>\u00a0**<\/b>It doesn&#8217;t matter if you cut it into strips or roll<\/p>\n<h4>Directions<\/h4>\n<p>Grate with the the bergamot on the outside with<u> the thin side of the grater<\/u><\/p>\n<p>cut them all into quarters and take out the flesh<\/p>\n<p>put the peals in a basin of water overnight (about 12 to 14 hours)<\/p>\n<p>The next day,\u00a0 roll each one up and pin them with toothpicks or thread them all together to take the shape<\/p>\n<p>Otherwise, cut them into long strips (one quarter comes out in 4-5 pieces)<\/p>\n<p>put them in a pot to boil for 5 minutes from the time the water boils<\/p>\n<p>Strain it and repeat the same process 2 more times<\/p>\n<p>Drain<\/p>\n<p>Take out the toothpicks and lightly squeeze the bergamot to remove most of the water<\/p>\n<h6><b>Weigh <\/b>the FRUIT<\/h6>\n<p>as many grams as the fruit is,\u00a0 put double the amount of sugar.<\/p>\n<p>Place bergamot and sugar in the pot<\/p>\n<p>Boil it on medium to high\u00a0 for 15 minutes and leave it overnight in the pot<\/p>\n<p>The next day,\u00a0 add the albaroriza flower(berry root) or vanilla powder and 2 tsp lemon juice until the dessert sets<\/p>\n<p><b>** <\/b>Store outside or in the refrigerator<\/p>\n<p><b>** <\/b>The dessert is set when you put a drop of the syrup on a cold plate and its not watery, it sits where you have dropped it<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Bergamot is one of the most aromatic spoon sweets!
