{"id":1275,"date":"2023-02-03T13:46:21","date_gmt":"2023-02-03T13:46:21","guid":{"rendered":"https:\/\/www.aroundofsalt.com\/?p=1275"},"modified":"2023-02-03T13:46:21","modified_gmt":"2023-02-03T13:46:21","slug":"spinach-pie","status":"publish","type":"post","link":"https:\/\/www.aroundofsalt.com\/?p=1275&lang=en","title":{"rendered":"SPINACH PIE"},"content":{"rendered":"<h4>Spinach pie (spanakopita) is a traditional Greek recipe with a crispy crust and a rich spinach filling!<\/h4>\n<p><!--more--><\/p>\n<h4>Ingredients<\/h4>\n<h6><b>Phyllo<\/b><\/h6>\n<p>2 \u00be cups flour<\/p>\n<p>1 cup of water<\/p>\n<p>1 tsp salt<\/p>\n<p>4 tbsp oil<\/p>\n<p>1-2 cups extra flour for opening the phyllo<\/p>\n<h6><b>Stuffing <\/b><\/h6>\n<p>600-700 g of spinach<\/p>\n<p>2 medium leeks (optional)<\/p>\n<p>5-6 green onions<\/p>\n<p>dill<\/p>\n<p>3 eggs<\/p>\n<p>A cup of olive oil<\/p>\n<p>300 grs\u00a0 feta cheese<\/p>\n<p>little oil for greasing the pan<\/p>\n<h4>Directions<\/h4>\n<h6>For the Phyllo<\/h6>\n<p>Put the flour and salt in a large bowl<\/p>\n<p>Make a well in the middle and put the water and oil there<\/p>\n<p>We start with one hand to make circles in the water and take the flour little by little until it becomes a ball<\/p>\n<p>We flour our counter a little we put our dough in an oblong shape like a thick stick<\/p>\n<p>Cut into 5 pieces, one being a little bigger than the others, this will be the last to be opened, it will be the first to go into the pan<\/p>\n<p>We make them into balls, put them in the bowl again and drizzle some flour on top and cover them with a towel. let the dough rest for 15 minutes<\/p>\n<p><em>Here we go:<\/em> Put flour (a tbs) on the counter, put a ball and on top again some flour and roll it round<\/p>\n<p>After 4 times (crosswise) turn the sheet round on the rolling pin and press outwards slightly to open the sheet not with too much pressure the sheet will stick<\/p>\n<p>spread it again on the counter and sprinkle it with a little flour, take the sheet again and put it on the rolling pin from a little further this time to make it round<\/p>\n<p>This process continues until the sheet is as wide and round as you want it to be.<\/p>\n<p>place on a clean surface and start on the next one<\/p>\n<p>You will do the same with the rest of dough<\/p>\n<p><b>**If the bottom sheet gets punctured, cut a bit from another sheet and patch it so the filling doesn&#8217;t come out.\u00a0 <\/b><b>Don&#8217;t <\/b><b>worry you won&#8217;t see anything when the pie is baked.<\/b><\/p>\n<h6><b>For the <\/b><b>pie:<\/b><\/h6>\n<p>Wash the spinach, leeks (only the white part), onions and dill<\/p>\n<p>Chop everything up and put it in a large bowl.<\/p>\n<p>Add salt and rub the greens a little to wilt for 1 minute<\/p>\n<p>Add the pepper, cheese, lightly beaten eggs and oil and mix<\/p>\n<p>Grease the pan and the sides a little so that the phyllo sheet doesn&#8217;t stick<\/p>\n<p>Put the large phyllo sheet down and cover the sides<\/p>\n<p>Put some stuffing on the first sheet and try to get it close to the corners<\/p>\n<p>Place the next sheet and do the same until the sheets are finished<\/p>\n<p>Calculate to share the filling for the four sheets, the fifth will go in to cover the pie<\/p>\n<p>Turn in the sides now close to the edge<\/p>\n<p>In the bowl inside put 3 tablespoons of oil and 3 water and we will sprinkle our pie to get a nice color<\/p>\n<p>Cut the pie into pieces, but <u>do not cut the bottom <\/u><u>sheet<\/u><\/p>\n<p>Bake at 180 degrees for about an hour depending on your kitchen<\/p>\n<p><strong>**<\/strong> cut the filling ahead of time so it is ready,\u00a0 this step can be done from the night before.<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Spinach pie (spanakopita) is a traditional Greek recipe with a crispy crust and a rich spinach filling!<\/p>\n","protected":false},"author":1,"featured_media":1273,"comment_status":"open","ping_status":"open","sticky":false,"template":"","format":"standard","meta":{"footnotes":""},"categories":[198],"tags":[333,233,452,454,337],"class_list":["post-1275","post","type-post","status-publish","format-standard","has-post-thumbnail","hentry","category-maindish_en","tag-feta-cheese","tag-flour","tag-phyllo","tag-pita","tag-spinach"],"yoast_head":"<!-- This site is optimized with the Yoast SEO plugin v27.5 -
