Bergamot is one of the most aromatic spoon sweets! Usually found in the winter.
Ingredients
Bergamot
Sugar
½ cup Water
albaroriza (berry root flower) or vanilla powder
1 tsp Lemon juice
**depending on how many grams you will make , you double the sugar
Ex. 500 gr fruit than you put 1000 gr sugar
**It doesn’t matter if you cut it into strips or roll
Directions
Grate with the the bergamot on the outside with the thin side of the grater
cut them all into quarters and take out the flesh
put the peals in a basin of water overnight (about 12 to 14 hours)
The next day, roll each one up and pin them with toothpicks or thread them all together to take the shape
Otherwise, cut them into long strips (one quarter comes out in 4-5 pieces)
put them in a pot to boil for 5 minutes from the time the water boils
Strain it and repeat the same process 2 more times
Drain
Take out the toothpicks and lightly squeeze the bergamot to remove most of the water
Weigh the FRUIT
as many grams as the fruit is, put double the amount of sugar.
Place bergamot and sugar in the pot
Boil it on medium to high for 15 minutes and leave it overnight in the pot
The next day, add the albaroriza flower(berry root) or vanilla powder and 2 tsp lemon juice until the dessert sets
** Store outside or in the refrigerator
** The dessert is set when you put a drop of the syrup on a cold plate and its not watery, it sits where you have dropped it
