MINI GREEK SPINACH PIES

Quick and easy recipe for spinach pie triangles! Delicious appetizer with crispy phyllo pastry! Perfect for a buffet and parties!

Ingredients

300-350g of spinach

3 green onions

2 tbsp chopped dill

½ tsp salt

¼ tsp pepper

250 g of feta cheese

2 eggs

4 tbsp olive oil

450gr Phyllo dough pastry sheets

1/3 cup olive oil for the phyllo

Directions

Wash and chop the spinach, onions and dill

Put them in a bowl

Pour in the salt, pepper and oil

In the bowl, break the feta into small pieces with our hands

Lightly beat the eggs and pour them over the rest of the ingredients

Mix very well

Open the phyllo and cut it into 4 straight strips (towards the long side of the phyllo)

Take a strip of phyllo and brush it with a little oil

Place another sheet on top and brush it with a little oil

Take a tablespoon of the mixture and put it to one side

Start by wrapping it diagonally from one side and then to the other upwards, folding it into  the shape of a triangle

Repeat the same process with all the phyllo strips and filling  **

Put a baking paper (parchment) in the pan

Place the spinach pies in the pan and lightly brush them with oil

Bake at 180 degrees for 15-20 minutes to get a nice color

** at this point you may store them in layers in a container or in an airtight bag in the freezer for later use
