STUFFED PEPPERS WITH FETA CHEESE

A delicious and easy dish full of flavour! Eaten hot or cold! The ultimate summer appetizer!

Ingredients

4 Florinis peppers (red peppers)

1 spring onion

2 tbsp chopped dill

4 tbsp olive oil

½ tsp salt

¼ tsp pepper

1 tsp hot red pepper (optional)

¼ cup olive oil for the pan and for brushing

Directions

In a bowl, crumble the feta with your hands or a fork

Chop the dill and spring onion and add them to the bowl

Add salt, pepper, oil and hot pepper

Mix well

Wash the peppers

Cut one side of the pepper down, a little after the middle we don’t reach the end of the pepper so that we don’t lose the filling

Also carve a little width under the stem to be able to remove the seeds

Remove the seeds

Repeat the same process with the rest of the peppers

Stuff the peppers

Put a little oil from the cup in the pan

Place the peppers inside and drizzle the remaining oil on top of the peppers

Bake in a preheated oven at 180 degrees for 35-40 minutes

** if the feta is too salty you may not add the salt

 ** you can put parsley instead of dill
