RAVANI SWEET SEMOLINA CAKE

Ravani is a traditional dessert! It is fluffy and syrupy! Can be served plain or accompanied by a scoop of ice cream!

Ingredients

5 eggs

½ cup light oil

1 cup sugar

1 cup coarse semolina

1 cup flour

1 strained yogurt

2 tsp or 1 sachet baking powder

2 vanilla

Syrup

3 ½ cups sugar

3 cups water

A little lemon juice

Directions

Prepare the syrup

Bring the sugar, water and lemon to a boil for about 3-4 minutes from the time they come to a boil

In the mixer, add the oil, eggs and yogurt and beat for 2 to 3 minutes

Add the remaining ingredients and beat until everything is combined

Grease a baking tray and pour the mixture in

Bake at 180 degrees for 35-45 minutes depending on the oven

Test with a toothpick to see if the cake comes out dry. When done, cut into squares and drizzle with syrup

** One should be lukewarm and the other hot
