A traditional and delicious greek winter soup! Its healthy and its simple to make!
Ingredients
250 gr white beans medium or small
4 tbs olive oil
1 onion
2 sticks of celery
2 carrots
1 ¼ tsp salt
¼ tsp pepper
1 small hot pepper (optional)
Directions
Put the beans in a pot with water to cover them, From the evening or for 10-12 hours
The next day let them come to a boil, strain and rinse
Place the beans back in the pot and add plenty of water to cover them
Coursly cut the onion, chop the celery and the carrots
Add all the ingredients, except the hot pepper (if you do not want it spicy)
Let them cook
Press the beans a little to thicken (optional)
About an hour on medium to high heat
** Depending on the beans, it may take a little longer, adding a little water may be necessary
** Should not be too watery, a nice thick soup
** Served nicely with olives, herring, onion and bread
