SOUFFLÉ WITH VEGETABLES

An easy vegetable soufflé! A meal that is delicious, filling and quick to prepare!

Ingredients

5 medium potatoes

1 red pepper

1 green pepper

4-5 mushrooms

3 zucchini

3 eggs

½ cup milk

½ tsp salt

¼ tsp pepper

3 tbs oil for the pan

100 g Gouda cheese

100 g feta cheese

Kefalotyri or parmesan

3 tbs oil for the end

Directions

Peel the potatoes and put them in water with a little salt to boil

When they are ready, cut them into round pieces

In a baking pan, spread the 3 tbsp of oil

Put half the potatoes on the bottom to cover a medium baking pan

Cut the peppers and the mushrooms into thin strips and put them on top of the potatoes

Clean the zucchini and cut them lengthwise as thinly as possible

Place them in the pan

Sprinkle the salt and pepper

Add the remaining potatoes

Add the grated Gouda and feta

Beat the eggs with the milk and pour over the soufflé

Add the kefalotyri or parmesan at the end

Drizzle 3 tbsp of oil on top

Cover with aluminum foil

Bake at 170 degrees for 35-40 minutes

Remove the aluminum foil and bake for about 15 minutes until it gets a nice golden brown color

** you may add any vegetables you like

 ** you may use a large baking pan by doubling the ingredients
