Baba ganoush is a middle eastern side dish! It’s a vegan dish that is very easy to make and with a few ingredients!
Ingredients
2 eggplants
1 tsp tahini
½ tsp salt
½ lemon
3 tsp olive oil
1 tsp parsley
Pomegranate (optional)
Sumac
Directions
Cut and discard the stem
Cut the eggplants in half
Place them on a baking sheet and bake at 180 degrees for 40-45 minutes
Once they are ready, empty the eggplant pulp into a bowl and chop with a knife or press with a fork to melt
Add the tahini, salt and lemon and mix well
Place on a plate
Add the parsley, pomegranate and olive oil
** serve with baked pitas or bread
