CHOUX WITH PASTRY CREAM

Delicious cream-filled Choux (cream puffs)! For a treat with your afternoon coffee or tea!

Recipe: Choux Pastry Dough

Ingredients

¾ cup sugar

½ cup corn flour

3 egg yolks

2 cups of milk

1 vanilla

50g butter

Directions

Put 1 ½ cups of milk in a saucepan over medium heat

Put the egg yolks with the sugar in a bowl and beat them well with a whisk

Add to the bowl the other ½ cup of milk and corn flour and continue to whisk

Pour the egg mixture to the warm milk and mix

Add the vanilla and butter

Continue mixing until the cream thickens

As soon as it thickens, remove it from the heat

Cover it with seran wrap,  place the wrap so it touches the cream all around.  We do this so the cream doesn’t form a crust over it

Put it in the freezer to cool down faster, otherwise in the refrigerator

For about half an hour

When you take it out of the freezer, mix it very well, and it’s ready to fill the Choux
