RUSSIAN SALAD

An authentic Russian salad that is a good side for all your meals! Perfect for a buffet!

Ingredients

5 medium potatoes

2 carrots

3 eggs

4 tbsp frozen or canned peas

6 dill pickles

ham or turkey 250-300g

1 tsp salt (not too full)

180g of mayonnaise (1 cup)

¼ tsp white pepper (optional)

Directions

Wash the potatoes and  carrots with their peals, the eggs and peas (if they are not canned) and put them in a pot all together to boil

Try inserting a fork in each vegetable and if it is easily inserted they are ready.  Some may be ready earlier than the others remove those first,  place them on a plate without water

Don’t forget the peas

the eggs will be ready about 10 minutes from the time the water boils

After all the ingredients have boiled, let them cool for at least half an hour

Clean the peals off the potatoes and cut them into thirds and diagonally then  into small cubes

Put them in a large bowl

Follow the same procedure for carrots,  ham or turkey

After cleaning the eggs, cut them into smaller cubes

add the peas and mix

Add the salt, pepper and mayonnaise and mix to combine the ingredients
