SALTED COD (BACALAO)

March 25th has arrived! In most Greek homes we eat salted cod and garlic spread! A traditional and delicious meal!

Ingredients

Salted cod

flour

Directions

This process is done in the morning. The day before you cook the cod

Wash the cod to remove the salt

Cut the fins and the tail

Scrape with the knife or with the special tool to remove the scales

Cut the large bone in the middle of the cod straight down and then into medium pieces

Put the pieces in a large bowl and cover them  with lots of water

Every 3-4 hours empty the cod into the sink, rinse it and cover it with clean water again

Leave it overnight in the water

In the morning change the water again with the same process

2 hours before frying, put the cod in a colander(strainer) to drain the water

Flour it well and fry it on medium heat until it gets a nice golden color

Served with garlic spread (see recipe) or french fries

** At the point before you flour the cod,  you can put it in the freezer ready for future use
